Basically a Navy Seal

Rust-proof after 100 dishwasher cycles.

Because it’s got more chromium than standard high-carbon stainless, ACUTO440's rust resistance is a lab result, not a marketing claim.

At 58±2 HRC, ACUTO440 has incredible edge retention without brittleness. That means you can put off sharpening it for longer.

Questions?

What are Misen’s ACUTO440 Knives made of?

Our ACUTO440 Knives are made with AICHI ACUTO440, an exceptionally corrosion-resistant Japanese high-carbon stainless steel. AICHI ACUTO440 is rust-proof, incredibly durable, and has excellent edge retention. What that means for you: less time cleaning and sharpening, more cooking.

What’s the difference between Misen’s ACUTO440 Knives and classic knives?

All of our knives are made from high-carbon stainless steel, which is what gives them their razor-sharpness and excellent edge retention. However, our ACUTO440 Knives have a much higher chromium content (about 18%), which makes them significantly more corrosion (aka rust) resistant.

Our ACUTO440 Knives also feature a rounded spine and heel (the back of the knife where the blade meets the bolster), creating a more comfortable grip over long prep sessions.

How are Misen’s ACUTO440 Knives different from other high-carbon knives?

We wanted our ACUTO440 Knives to be high-performance tools that you could still leave in the sink overnight if you needed to. That’s why our ACUTO440 Knives are made with AICHI ACUTO440, a Japanese high-carbon stainless steel that is more durable and easier to care for than other high-carbon knives, which are prone to rusting and/or chipping without proper care.

What do you mean by rust-proof?

Our ACUTO440 Knives are made with AICHI ACUTO440 steel, an exceptionally corrosion-resistant Japanese high-carbon stainless steel. Our knives have been lab-certified to withstand up to 100 dishwasher cycles, as well as 50 days of being submerged in water, without showing any signs of rust.

Can I put Misen’s ACUTO440 Knives in the dishwasher?

While our ACUTO440 Knives have been lab-certified to withstand up to 100 dishwasher cycles without showing any signs of rust, we generally recommend hand washing all of your Misen knives. Because our knives are extremely sharp, when they get jostled around in the dishwasher, the blade can cut through the soft materials that make up your dishwasher racks. Dishwashing can also damage your knives if the blade edge bangs against hard objects like flatware or pots and pans during the washing cycle.

How often should I sharpen my knives?

Whenever you start to notice your knife is slicing and dicing a little less crisply than usual, it’s time to sharpen. Although our ACUTO440 Knives can go long periods between sharpenings, we generally recommend getting them sharpened about twice a year for best performance. We also recommend regularly using a honing rod between sharpenings to keep your knife edge in good shape.

My blade has discoloration and/or staining. What is this?

While our ACUTO440 Knives are rust-proof, all high-carbon knives can experience some discoloration and/or staining with prolonged exposure to acidic foods and/or salt. This is purely cosmetic and is not the same as rust.

    Most used knife

This knife is almost out on our counter because we use it every day to slice breads and bagels. It is angled perfectly to obtain thin or thick slices. It has maintained its sharpness, and I have purchased several as gifts.

    Wow that's sharp

I love Misen. I have a couple pans and now purchased a third knife. Did I need it? No. Was the price right and did I trust the quality? Yes! The personalization option, for free, sealed it for me.

When I tried it the first time it just confirmed it was a great decision. Super sharp, the right size and I absolutely love it.

We have tried it on sourdough bread and typical knives made it difficult. This knife was amazing

5-Inch ACUTO440 Serrated Knife, White

This 5-inch serrated knife is built for the foods that tend to crush, skid, or tear under a straight edge. Its wave-style serrations are designed to glide through crusty, soft, and squishy ingredients (think bread and tomatoes) while keeping cleaner slices, and the blade is made from rust-proof ACUTO440 steel for pro-level sharpness and edge retention.

All of the ACUTO serrated options share the same core idea: wave-shaped serrations that keep you moving forward instead of sawing and squeezing. The main decision point is size. A 5-inch serrated knife feels nimble for quick prep and smaller items, and it is easy to maneuver when you want controlled, short strokes. If you routinely slice longer loaves or want more blade to span wider foods, stepping up to an 8-inch version is the straightforward change.

The other difference is color, which is purely an aesthetic choice based on the information provided. The White handle keeps a clean, bright look on the board; Red, Blue, and Black give you other visual options, but the steel and serration style remain the same across these ACUTO440 serrated knives. If you want to see the broader lineup in one place, browse the serrated knives collection, or compare shapes and blade styles across Misen’s kitchen knives selection.

Rust resistance is a big part of what makes this knife low-stress for daily cooking. The blade is lab-tested for rust resistance, including withstanding extended submersion in water and repeated dishwasher cycles, although Misen still recommends hand washing and drying immediately after use for best results. For comfort, the knife includes an ergonomic rounded spine, which supports a comfortable pinch grip during repetitive slicing.

For upkeep, plan to sharpen periodically (Misen suggests every 4 to 6 months), and remember that high-carbon knives can show discoloration after exposure to acidic foods or salt. The page notes this discoloration is cosmetic and different from rust, which is extremely rare. For step-by-step guidance, the ACUTO knives care page is the best reference for daily cleaning, drying, and long-term maintenance.

Frequently Asked Questions About Serrated Knives

What foods is this 5-inch serrated knife designed to cut?

Yes, this knife uses rust-proof ACUTO440 steel. The page also notes lab-tested rust resistance, including tests involving prolonged water exposure and repeated dishwasher cycles, with rust described as extremely rare.

Should I put it in the dishwasher?

Even though the blade has been tested to withstand many dishwasher cycles, Misen’s recommended care is to hand wash and dry immediately after use. Following the care guidance helps preserve performance and appearance over time.

How often should I sharpen it?

Misen recommends sharpening every 4 to 6 months as part of regular maintenance. If you prefer not to sharpen at home, the site also offers a mail-in knife sharpening service.
