Higher-carbon steel for a longer lasting edge.

Japanese AUS-10 steel has higher carbon than German steel, so you can sharpen less often and cut more easily.

Questions?

How long will this knife stay sharp?

It really depends on how often you use the knife, and what items you’re cutting. When tested in the rigors of a professional kitchen, the Misen knife outperformed brands that cost 30-50% more. However, no knife — including Misen’s — will stay sharp forever. When the blade starts to dull, we’ll have our expert sharpeners bring it back to its original glory for you, starting at $11/knife.

Does this knife require special care?

Misen high-end knives are extremely easy to care for. Avoid the dishwasher, wash and dry after use, and you’ll never have an issue with your knife.

What are your blades made from?

We craft our Chef’s Knife with premium Japanese AUS-10 high-carbon stainless steel for two main reasons. First, it’s a steel that offers an excellent balance between toughness, durability, and razor sharpness. Second, it has 2x the carbon content of some other “premium” brands, which helps the edge stay noticeably sharper for a longer time.

How can your knife be as good as other high-end knives if it costs so much less?

Most knives cost so much because of traditional retail markups and other fees. You’d be shocked to know how little many well-known “premium” knives actually cost to make. By partnering closely with our factories and selling directly to you online, we’re able to offer an incredible knife at wholesale pricing with absolutely zero markups. Better materials, lower price.

Does it make sense to buy one knife, and not a set?

The single most important tool in your kitchen is the chef’s knife — it’s the workhorse you reach for most often. Investing in one great knife now will change your cooking for life. We actually designed our chef’s knife to replace entire knife sets; with a 15º blade angle and hybrid Japanese/German design, this knife can do 99% of your kitchen cutting.

But if you’re interested in a set, we offer 3- and 5-piece sets including our other knives — including Paring, Serrated, Santoku, and Utility — in addition to the Chef’s Knife.

How does your warranty and trial work?

We’re 100% confident you’ll love your Misen knife. Confident enough to give you a 60-day in-home trial. If for any reason you’re not satisfied, just send it back for a full refund. All Misen knives come with a lifetime warranty against defects. We will replace any defective knives.

    Great choice

This knife is very well made. The handle is large enough to get a firm grip, the blade is strong enough to do heavier task. I believe we will get many years of good use from this knife. Also we got it at a great price.

    6” boning knife

Truly, one of the sharpest knives I’ve ever have and I’ve always been a wusthof knife person. Once again this knife is one of the sharpest ones right out of the box I have ever gotten so far so good. and you know what they say a sharp knife is the best bet so Misen has got my vote.

    6 inch Boning Knife

looks and feels very nice. I have not really been able to carve up some meat with it except one 15# prime rib roast. That was satisfying!

Why the AUS‑10 Boning Knife Is Essential for Precise Butchery

A 6-inch boning knife is the right tool whenever you need to work close to bone — breaking down a whole chicken, trimming a rack of ribs, or removing silver skin from a pork tenderloin. The narrow, slightly flexible blade lets you follow contours precisely, wasting less meat than a general-purpose knife ever could. Made from AUS-10 steel, it holds a sharp edge well and responds easily to a honing rod between uses.

For cooks who want a matched set, this knife pairs naturally with the 8" Chef's Knife in AUS-10 for everyday prep, or the 7.5" Fillet Knife when fish butchery is on the menu. If you prefer a different handle color, the same blade is also available as the 6" Boning Knife in Blue. Hand-washing and prompt drying will keep the blade and handle in top condition over the long term.
