Questions?

How long will this knife stay sharp?

It really depends on how often you use the knife, and what items you’re cutting. When tested in the rigors of a professional kitchen, the Misen knife outperformed brands that cost 30-50% more. However, no knife — including Misen’s — will stay sharp forever. When the blade starts to dull, we’ll have our expert sharpeners bring it back to its original glory for you, starting at $11/knife.

Does this knife require special care?

Misen high-end knives are extremely easy to care for. Avoid the dishwasher, wash and dry after use, and you’ll never have an issue with your knife.

What are your blades made from?

We craft our Chef’s Knife with premium Japanese AUS-10 high-carbon stainless steel for two main reasons. First, it’s a steel that offers an excellent balance between toughness, durability, and razor sharpness. Second, it has 2x the carbon content of some other “premium” brands, which helps the edge stay noticeably sharper for a longer time.

How can your knife be as good as other high-end knives if it costs so much less?

Most knives cost so much because of traditional retail markups and other fees. You’d be shocked to know how little many well-known “premium” knives actually cost to make. By partnering closely with our factories and selling directly to you online, we’re able to offer an incredible knife at wholesale pricing with absolutely zero markups. Better materials, lower price.

Does it make sense to buy one knife, and not a set?

The single most important tool in your kitchen is the chef’s knife — it’s the workhorse you reach for most often. Investing in one great knife now will change your cooking for life. We actually designed our chef’s knife to replace entire knife sets; with a 15º blade angle and hybrid Japanese/German design, this knife can do 99% of your kitchen cutting.

But if you’re interested in a set, we offer 3- and 5-piece sets including our other knives — including Paring, Serrated, Santoku, and Utility — in addition to the Chef’s Knife.

How does your warranty and trial work?

We’re 100% confident you’ll love your Misen knife. Confident enough to give you a 60-day in-home trial. If for any reason you’re not satisfied, just send it back for a full refund. All Misen knives come with a lifetime warranty against defects. We will replace any defective knives.

    Wonderful Knife

Very Sharp and great to use! I wish it had a knife sheaf to protect the blade so it doesn't get dull,

I wash it by hand and. Dry it promptly and put it in my knife rack.

My partner loves this for it's feel

I owed my partner an amends chef knife. I've been using Misen cookware since the first kickstarter in 2020 (I think that's when it was?). But knives. Nope. I've had mine for decades... God that's.. Terrible. :(

So has my partner. You could say we take our respective kitchen ware seriously.

She has smaller hands, being five ft tall. Its been my experience that things don't fit anyone because things are made for everyone.

So, never having had a bad experience with a Misen anything, plus the smaller size, and gave me good vibes this knife might just be used. Little did I know, it would become THE knife. She loves it for its feel, effortless, and I think, stability would be how she would phrase it. Like, she is in proper control of the knife, it's weighted well. Nothing but praise. And it's red. Why does everything have to be black all the time? 😉

    A joy to use

Razor sharp and wonderfully balanced. Misen is a huge upgrade from my previous knives and makes quick work of everything I have had to cut so far. There are no nooks or crannies so cleaning and drying are very easy.

    Staying sharp

I’ve been using this for a month, and it has stayed sharp. I know, because I now have bandaids on my fingers. Lol

    My favorite knife ever

Misen knives are the best quality i've ever owned, i've been a fan since the original campaign. The smaller size of this knife is the best size and weight for me personally, i'm thrilled to be able to own a top quality knife in the right size for me!

Why the 6.5‑Inch AUS‑10 Chef Knife Is Ideal for Home Cooking

The 6.5-inch AUS-10 chef's knife is built for cooks who want the control of a smaller blade without giving up versatility. Its high-carbon Japanese steel holds an edge well, and the sloped bolster keeps your grip steady through rocking, chopping, and slicing. If your hands are on the smaller side, or you simply prefer a lighter, more maneuverable tool, this size often feels more natural for everyday prep than the full-size 8-inch chef's knife.

For most kitchens, this one knife can realistically replace an entire block set thanks to its 15-degree edge and hybrid Japanese/German profile. That said, it pairs well with a dedicated serrated knife for bread and tomatoes, or a boning knife if you break down poultry or fish at home. Hand wash and dry it promptly after each use, and plan on sharpening every four to six months to keep the edge performing as intended.
