Customer Reviews
The 6.5" Chef's Knife is built around AUS-10 Japanese steel, ground to a 15-degree edge that holds sharpness through repeated daily use. Its slightly smaller blade makes it especially well-suited for cooks who prefer a lighter, more nimble feel — ideal for breaking down vegetables, slicing herbs, or portioning boneless proteins where a full 8" knife can feel unwieldy.
Compared to the 8" Chef's Knife, this 6.5" version offers the same AUS-10 steel construction and bolster design in a format that's easier to maneuver on a smaller cutting board or when tackling more delicate prep work. If you'd like the same knife in a different finish, it's also available as the 6.5" Chef's Knife in Gray. All Misen knives come backed by a lifetime warranty against defects, so this is a tool you can depend on for the long haul.
