Questions?

How long will this knife stay sharp?

It really depends on how often you use the knife, and what items you’re cutting. When tested in the rigors of a professional kitchen, the Misen knife outperformed brands that cost 30-50% more. However, no knife — including Misen’s — will stay sharp forever. When the blade starts to dull, we’ll have our expert sharpeners bring it back to its original glory for you, starting at $11/knife.

Does this knife require special care?

Misen high-end knives are extremely easy to care for. Avoid the dishwasher, wash and dry after use, and you’ll never have an issue with your knife.

What are your blades made from?

We craft our Chef’s Knife with premium Japanese AUS-10 high-carbon stainless steel for two main reasons. First, it’s a steel that offers an excellent balance between toughness, durability, and razor sharpness. Second, it has 2x the carbon content of some other “premium” brands, which helps the edge stay noticeably sharper for a longer time.

How can your knife be as good as other high-end knives if it costs so much less?

Most knives cost so much because of traditional retail markups and other fees. You’d be shocked to know how little many well-known “premium” knives actually cost to make. By partnering closely with our factories and selling directly to you online, we’re able to offer an incredible knife at wholesale pricing with absolutely zero markups. Better materials, lower price.

Does it make sense to buy one knife, and not a set?

The single most important tool in your kitchen is the chef’s knife — it’s the workhorse you reach for most often. Investing in one great knife now will change your cooking for life. We actually designed our chef’s knife to replace entire knife sets; with a 15º blade angle and hybrid Japanese/German design, this knife can do 99% of your kitchen cutting.

But if you’re interested in a set, we offer 3- and 5-piece sets including our other knives — including Paring, Serrated, Santoku, and Utility — in addition to the Chef’s Knife.

How does your warranty and trial work?

We’re 100% confident you’ll love your Misen knife. Confident enough to give you a 60-day in-home trial. If for any reason you’re not satisfied, just send it back for a full refund. All Misen knives come with a lifetime warranty against defects. We will replace any defective knives.

    Great fillet knife!

I just purchased and used the fillet knife to clean more than 10 walleyes. It was the first use of this knife and I did not touch the blade prior to use. The knife worked excellently. Good blend of stiffness and flexibility. It came very sharp right out of the box. It cleaned those 10 walleyes without need of a touch-up and could have done more. I have two other good to high quality fillet knives and the Misen maintained it's sharpness better than the other two.

I actually purchased this knife as a gift for a friend, and now I wish I had kept it for myself!

I would only change 1 thing. I'd make it 1, or 1.5 inches longer. The length would help with larger and fatter fish (which we never catch 😄).

Great knife. If I was looking to buy one, I wouldn't look further.

    Nice and sharp!

It's a Misen so I'm a fan already. I haven't had the chance to use it a lot since I got it, but I already love the size and shape of the blade. I'm looking forward to carving up my next smoked pork roast or chicken.

    Just the thing

This was my nephew’s request as part of a bday present. Using it at work every day.

Why the Lightest Fillet Knife Is Ideal for Precision Prep

The Misen 7.5" Fillet Knife is built around a lightweight, flexible blade that makes delicate work — like running along pin bones, skinning fillets, or trimming silver skin from meat — noticeably easier and safer than reaching for a heavier knife. That flex lets the blade follow the contours of fish and meat closely, giving you cleaner cuts with less waste.

If you already break down whole proteins before finishing with a fillet knife, the 6" Boning Knife is a natural companion — its stiffer blade handles joints and cartilage where a fillet knife's flex would be a liability. For everyday prep beyond fish, the 8" Chef's Knife in black rounds out a capable trio. All Misen knives are covered by a lifetime warranty against defects, so this is a long-term addition to your prep rotation rather than a single-use specialty tool.
